Description
This impressive surprise-inside loaf features a bright, zesty lemon cake that reveals a secret vanilla Batman signal in every slice. It is a creative and manageable baking project that uses a double-bake technique to achieve a professional-looking superhero theme without the need for complex frosting skills.
Ingredients
- All-purpose flour
- Granulated sugar
- Baking powder
- Salt
- Unsalted butter, softened
- Heavy cream or whole milk
- Vegetable oil
- Large eggs
- Vanilla extract
- Black gel food coloring
- Fresh lemon zest
- Fresh lemon juice
Instructions
- Preheat your oven to 350°F and grease a 13×9 inch half sheet pan.
- Whisk together the dry ingredients (flour, sugar, baking powder, and salt) in a medium bowl.
- In a mixer, beat the butter until creamy, then alternate adding the dry mix and the wet ingredients (cream, oil, vanilla, and eggs) until a smooth batter forms.
- Stir in enough black gel food coloring to reach a deep, dark shade, then pour the batter into the prepared sheet pan and bake for 25–30 minutes.
- Once the black cake has cooled completely, use a Batman cookie cutter to punch out as many shapes as possible.
- Place the cutouts on a tray and freeze them for at least 30 minutes to ensure they hold their shape during the second bake.
- Mix the lemon batter following the same method as the first batter, but substitute the vanilla and food coloring with fresh lemon juice and zest.
- Butter a 9×5 inch loaf pan and pour approximately one-third of the lemon batter into the bottom.
- Take the frozen Batman shapes and stack them upright in a tight, continuous row down the center of the loaf pan.
- Carefully pour the remaining lemon batter over and around the shapes, smoothing the top with a spatula.
- Bake at 350°F for 25–30 minutes or until a toothpick inserted into the yellow portion of the cake comes out clean.
- Allow the loaf to cool completely before slicing to reveal the hidden Batman signal.
Notes
To ensure the internal design is perfectly centered, try to use a cookie cutter that is slightly shorter than the height of your loaf pan. Additionally, when pouring the final layer of batter, do it slowly to avoid shifting the frozen cutouts out of their alignment.
