We are using tender 6-inch vanilla layers and a forgiving American buttercream to create a fun, track-style design. With a few fondant accents and a simple color palette, you’ll create a centerpiece that looks like it came from a bakery, but tastes like pure home-baked love.

Ingredients

  • 3 6-inch vanilla cake layers, leveled
  • 1 batch American buttercream (divided into white, sky blue, and green)
  • Assorted fondant packs (red, yellow, white, black, and green)
  • Royal Blue and Green gel food coloring
  • Toothpicks (for toppers)


Instructions

  1. Secure the first cake layer to a board with buttercream, then stack the remaining layers with thick, even spreads of vanilla frosting between them.
  2. Apply a thin crumb coat of sky blue buttercream over the entire cake and refrigerate until firm to lock in crumbs.
  3. Roll out various colors of fondant to 1/16 inch thick and cut out cars, clouds, a black track ring, and toppers, using toothpicks to support any standing pieces.
  4. Apply a thick final coat of sky blue buttercream and use a bench scraper to create a smooth, clean finish on the sides and top.
  5. Place the black fondant track on top and arrange the 2D cars around the sides of the cake.
  6. Use a Wilton 133 grass tip to pipe green buttercream borders around the base and track, then finish by adding the toppers and a 3D car.

Ensure your cake layers are completely chilled before frosting to prevent the layers from sliding or the buttercream from melting. If you are working in a warm kitchen, don’t hesitate to pop the cake back in the fridge for 10 minutes between any step to keep the design sharp and stable.

How to Make It

Start by securing your first leveled cake layer to the board with a dab of buttercream. Spread a thick, even layer of vanilla buttercream between each cake layer as you stack them. Once stacked, apply a thin layer of sky blue buttercream all over (the crumb coat) and pop it in the fridge until firm. This locks everything in place.

Step 2: Create the Decor

While the cake chills, roll out your fondant to about 1/16 inch thick. Use cutters or a stencil to cut out 2D cars, clouds, and your track (a black ring works great). For the toppers, sandwich a toothpick between fondant layers for the signs and stars so they stand up tall.

Step 3: Final Frosting

Apply a thicker final coat of sky blue buttercream to the chilled cake. Use your bench scraper to smooth the sides. If the frosting gets too soft or warm, just put the cake back in the fridge for 10 minutes before finishing.

Step 4: Assemble the Scene

Place the black fondant track on top. Arrange your 2D cars around the sides in rainbow order. Use the grass tip to pipe green buttercream borders and tufts around the cars and track. Finally, insert your toppers and place the 3D car on the track!
