Ingredients
- 2 cups granulated sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 2 large eggs
- 1 cup milk (whole or 2%)
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Chocolate ganache frosting
- Assorted candies (lollipops, M&Ms, Kit Kats)
Instructions
- In a large mixing bowl, whisk together the eggs, oil, milk, and vanilla extract until the mixture is smooth and pale.
- In a separate bowl, whisk together the flour, sugar, cocoa powder, baking powder, and baking soda to remove any lumps.
- Add the dry mixture to the wet ingredients and mix until just combined, being careful not to overmix.
- Slowly pour the boiling water into the batter and stir until it is thin and completely smooth.
- Divide the batter evenly between two greased and floured 9-inch round baking pans.
- Bake at 350°F (175°C) for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool completely in the pans before removing them to frost with chocolate ganache and decorating with your choice of candies and lollipops.
Notes
To achieve the best rise and texture, bring your milk and eggs to room temperature before you begin mixing. If your cake layers have a slight dome after cooling, use a serrated knife to gently level them off for a more stable and professional-looking stack when frosting.
