Description

These chewy and tender cookies use a boxed cake mix as a shortcut for a perfectly balanced treat in minutes. They are incredibly versatile, allowing you to swap flavors and add your favorite mix-ins for a custom bake every time.


Ingredients

  • 1 box (15.25 oz) cake mix, any flavor
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 to 1 cup optional mix-ins (chocolate chips, nuts, or sprinkles)


Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, combine the dry cake mix, vegetable oil, and eggs, stirring until no dry streaks remain and a thick dough forms.
  3. Gently fold in your choice of mix-ins, such as chocolate chips or sprinkles, until evenly distributed.
  4. Scoop the dough into 2-tablespoon-sized balls and place them on the prepared baking sheets, spaced 2 inches apart.
  5. Bake for 10 to 12 minutes until the edges are firm; allow them to cool on the pan to finish setting.

Notes

For the best results, avoid over-mixing the dough once the dry ingredients are incorporated to keep the texture light and pillowy. If you find the dough too sticky to handle, chilling it in the refrigerator for about 15 minutes makes scooping much easier and helps the cookies hold their shape.
