Description

Transform simple boxed cake mixes into a majestic fairy-tale masterpiece with this approachable Castle Cake recipe. Using ice cream cones and vibrant sprinkles, you can create impressive turrets and magical towers that will delight guests of all ages.


Ingredients

  • 3 boxes yellow cake mix (plus eggs, oil, and water as directed on box)
  • 4 containers white frosting
  • 1 teaspoon almond extract
  • 9 flat-bottom ice cream cones
  • 5 sugar cones
  • Pink sugar sprinkles
  • Food coloring (pink, yellow, and green)
  • White fondant
  • Shredded coconut
  • Candy flowers


Instructions

  1. Bake the cake mixes according to package directions to produce two 9×13-inch cakes and two 8-inch round cakes; let cool completely.
  2. Frost nine flat-bottom cones and five sugar cones, then roll the sugar cones in pink sprinkles to create shimmering tower tops.
  3. Level the domes off all cakes with a cake leveler so they sit flat for stacking.
  4. Place one 9×13 cake on a platter, frost the top, and stack the second 9×13 cake on top to create the base.
  5. Center the two 8-inch round cakes on top of the base, frosting between the layers, then coat the entire structure in white frosting.
  6. Carve small notches out of each corner of the rectangular base and stack two flat-bottom cones in each corner topped with a pink sugar cone.
  7. Insert a frosted regular cone into the top tier and crown it with the final pink sugar cone to create the central spire.
  8. Tint remaining frosting with food coloring to pipe borders and vines, use fondant for the door, and finish with green-tinted coconut for grass.

Notes

To ensure the structure is stable, I recommend chilling the baked cakes for at least two hours before carving the notches for the towers. If the frosting feels too soft while assembling, pop the whole cake in the fridge for 20 minutes to firm up before adding the final decorative details.
