Description

Ingredients

  • All-purpose flour
  • Caster sugar
  • Baking powder
  • Bicarbonate of soda
  • Dark cocoa powder
  • Eggs
  • Strong black coffee
  • Olive oil
  • Milk
  • Cream cheese, room temperature
  • Sweetened condensed milk
  • Heavy cream
  • Vanilla extract
  • Chopped chocolate
  • Chocolate cereal
  • Melted chocolate


Instructions

  1. Preheat your oven to 175°C (350°F) and grease a standard cake pan with butter or oil.
  2. In a large bowl, whisk together the flour, caster sugar, baking powder, bicarbonate of soda, and dark cocoa powder.
  3. Add the eggs, black coffee, olive oil, and milk to the dry ingredients and stir with a whisk until the batter is smooth.
  4. Pour the batter into the prepared pan and bake for 30 to 35 minutes until a toothpick inserted into the middle comes out clean.
  5. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Whip the room-temperature cream cheese until smooth, then slowly add the sweetened condensed milk, heavy cream, and vanilla, whipping until fluffy.
  7. Prepare a ganache by pouring hot heavy cream over chopped chocolate and stirring until velvety.
  8. Mix your chosen chocolate cereal with a bit of melted chocolate and a dusting of cocoa powder for the topping.
  9. Spread the frosting over the cooled cake, pour the ganache over the top, add the cereal topping, and refrigerate for at least 2 hours to set.

Notes

For the best results, allow the cake base to rest overnight wrapped in plastic before frosting to help the moisture distribute evenly. Ensure your heavy cream is very cold when making the frosting to achieve maximum volume and stability.
