Ingredients

  • 1 egg
  • 1/4 cup peanut butter (xylitol-free)
  • 1/4 cup cooking oil
  • 1 teaspoon vanilla extract
  • 1/3 cup honey
  • 1 cup shredded carrots
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 6-cup ring mold or fluted tube pan.
  2. In a large mixing bowl, whisk together the egg, honey, peanut butter, cooking oil, and vanilla extract until smooth.
  3. Stir the shredded carrots into the wet mixture until evenly distributed.
  4. Sift the flour and baking soda together, then gently fold into the carrot mixture until just combined.
  5. Pour the batter into the prepared pan and bake for approximately 40 minutes, or until a toothpick comes out clean.
