Description
Create a magical and memorable centerpiece with this soft, hot milk strawberry sponge doll cake. It features a tender pink crumb and a beautifully piped whipped cream gown, making it the perfect showstopper for any birthday celebration.
Ingredients
- 250g Unsalted butter, softened
- 250g Granulated sugar
- 4 Large eggs
- 1 cup Whole milk, heated
- 1 tsp Strawberry essence
- Pink or red food coloring
- 250g All-purpose flour, sifted
- 2 tsp Baking powder
- 500ml Heavy whipping cream
- 1 Fashion doll for decoration
Instructions
- Preheat your oven to 170°C (340°F) and grease your chosen cake pans.
- Cream the softened butter and sugar together until the mixture is pale and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the hot milk, strawberry essence, and food coloring until the batter is a vibrant pink.
- Gently fold in the sifted flour and baking powder until just combined.
- Divide the batter into a dome pan or three round pans of decreasing sizes (20cm, 18cm, 15cm) and bake for 20-25 minutes.
- Let the cakes cool completely on a wire rack to prevent the icing from melting.
- Prepare the doll by wrapping the lower half tightly in plastic wrap for food safety.
- Stack the cooled cake layers with whipped cream in between and carve into a smooth dome shape if necessary.
- Insert the doll into the center, apply a thin crumb coat of icing over the whole mound, and chill for 20 minutes.
- Decorate the gown using a piping bag with a star or rosette nozzle, finishing with a piped bodice on the doll’s torso.
Notes
To ensure the best results, use a high-quality strawberry essence and whip your cream to very stiff peaks for stable piping. If the cake feels unstable during carving, chill it for an extra 15 minutes to firm up the crumb and make the shaping process much cleaner.
