Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 4 tablespoons cocoa powder
  • 1 cup boiling water
  • 1/2 cup buttermilk
  • 2 large eggs, lightly beaten
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 6 tablespoons milk
  • 4 cups powdered sugar
  • 1/2 cup chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 18-by-13-inch sheet pan.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt to remove lumps.
  3. In a medium saucepan, melt 1 cup of butter over medium heat, then whisk in 4 tablespoons of cocoa powder and the boiling water.
  4. Let the mixture bubble for 30 seconds, then remove from heat and pour over the flour mixture, stirring gently to combine.
  5. In a small bowl, whisk together the buttermilk, beaten eggs, baking soda, and 1 teaspoon of vanilla extract.
  6. Pour the liquid mixture into the chocolate batter and stir until just combined and glossy.
  7. Pour the batter into the prepared sheet pan and bake for 20 minutes or until a toothpick comes out clean.
  8. While the cake bakes, prepare the icing by melting the remaining butter and cocoa in a saucepan, then whisking in milk, powdered sugar, and extra vanilla until smooth.
  9. Stir in the chopped pecans and pour the warm icing over the cake as soon as it is removed from the oven.

Notes

To ensure a perfectly smooth icing, sift your powdered sugar before adding it to the warm butter mixture. If you prefer a nut-free version, you can replace the pecans with dark chocolate shavings or simply omit them for a sleek, velvety finish. For the most tender texture, be sure to use room temperature eggs and buttermilk to prevent the melted chocolate base from seizing during mixing.
