Description

Ingredients

  • 24 oz softened butter
  • 24 oz granulated sugar
  • 12 large eggs, room temperature
  • 28 oz self-raising flour
  • 2 tsp vanilla essence
  • Light blue and dark blue ready-made icing
  • Pink, white, and thin green piping icing
  • Silver balls and snowflake sprinkles


Instructions

  1. Preheat your oven and grease four pudding basins to ensure the cakes release easily after baking.
  2. In a large mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating well after each addition to maintain a smooth consistency.
  4. Gently fold in the self-raising flour and vanilla essence until just combined, being careful not to overmix.
  5. Divide the batter evenly between the four prepared pudding basins.
  6. Bake until a skewer inserted into the center of each cake comes out clean, then let them cool completely on a wire rack.
  7. Stack the cakes using layers of icing as glue, then trim the edges to refine the gown shape if needed.
  8. Cover the gown with rolled blue icing and add decorative piping and sprinkles to finish the look.

Notes

Ensure all your refrigerated ingredients, especially the eggs and butter, are at room temperature before you begin mixing to achieve a perfectly smooth batter. If you find the cake layers are difficult to stack, chilling them for 30 minutes in the refrigerator before assembly will make them much firmer and easier to handle.
