Description

This stunning Frank Ocean Cake combines a tender vanilla sponge with a creative gummy ocean and sandy graham cracker finish. It is a reliable and impressive dessert that brings a peaceful beach aesthetic to any celebration or special gathering.


Ingredients

  • All-purpose flour
  • Caster sugar
  • Softened unsalted butter
  • Baking powder
  • Salt
  • Eggs
  • Milk
  • Vegetable oil
  • Greek yogurt or sour cream
  • Vanilla extract
  • Teal and blue food gel
  • Gelatin powder
  • Water
  • Granulated sugar
  • Graham crackers
  • Modelling chocolate (chocolate and corn syrup)
  • Craft paper and sticks


Instructions

  1. Preheat your oven and line baking tins with parchment paper and oil spray.
  2. Whisk together the flour, sugar, baking powder, and salt using a hand mixer on low speed.
  3. Incorporate the softened butter into the dry mixture until it reaches a fine, sandy texture.
  4. Mix in the eggs, milk, oil, yogurt, and vanilla extract until the batter is smooth.
  5. Divide the batter into three portions, color two with food gel, and bake in prepared tins until a toothpick comes out clean.
  6. Allow cakes to cool completely in the pans, then chill in the refrigerator overnight.
  7. Level the cakes, slice in half, and stack with rings of colored frosting before chilling the stack.
  8. Carve a gentle slope into one side of the cake, apply a thin crumb coat of frosting, and chill again.
  9. Wrap the cake tightly with acetate and plastic wrap to create a secure seal.
  10. Prepare the gelatin mixture with water and sugar, cool to room temperature, and pour into the carved slope.
  11. Chill until the gelatin is set, then decorate with crushed graham cracker sand and modelling chocolate palm trees.

Notes

To ensure a perfectly clear and stable ocean, always allow your gelatin mixture to reach room temperature before pouring it onto the frosted cake. Double-wrapping the acetate around the base is the best way to prevent leaks while the gummy layer sets in the refrigerator.
