Description

Bring the magic of the fairgrounds to your home with this straightforward funnel cake recipe. It delivers a satisfyingly crispy exterior and a soft, tender middle using ingredients you likely already have in your pantry.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a medium-sized bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, whisk the milk, eggs, and vanilla extract until the eggs are fully integrated into the milk.
  3. Gradually whisk the dry ingredients into the wet mixture until the batter is smooth and thin enough to flow easily.
  4. Heat two to three inches of vegetable oil in a medium saucepan to a temperature of 370-375F (187-190C).
  5. Drizzle about 1/2 cup of batter into the oil in a thin stream, moving in circles and criss-crossing to create a webbed pattern.
  6. Fry for 90 seconds per side until golden brown, then drain on paper towels and dust with powdered sugar while warm.

Notes

For the best control during frying, try using a clean squeeze bottle instead of a traditional funnel to create more intricate patterns. Make sure to monitor your oil temperature closely between batches, as it can drop quickly once the batter is added, potentially leading to a greasier cake.
