Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 1 3/4 cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
- 1 tablespoon white vinegar
- 4 cups confectioners’ sugar
- 2-3 tablespoons milk (for frosting)
- Colorful sprinkles for decorating
Instructions
- Preheat your oven to 350F (175C) and grease two 8-inch cake pans with butter and flour or parchment rounds.
- Stir the milk and vinegar together in a small bowl and let it sit for 5 minutes to create homemade buttermilk.
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking soda, baking powder, and salt.
- In a large bowl or stand mixer, beat the softened butter, oil, and granulated sugar for 3 minutes until pale and fluffy.
- Add the eggs one at a time, mixing after each, then stir in the vanilla extract and 1/2 cup of the prepared buttermilk.
- Turn the mixer to low and add the flour mixture in three parts, alternating with the remaining buttermilk, mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for 35 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 15 minutes before transferring to a wire rack to cool completely.
- To make the frosting, beat the softened butter and confectioners’ sugar with vanilla and milk for a full 10 minutes until very white and stable.
- Stack the cooled layers with a generous amount of frosting in between, apply a thin crumb coat, chill for 20 minutes, and then finish with the remaining buttercream and sprinkles.
Notes
To achieve the flattest cake layers for easier stacking, ensure all your refrigerated ingredients reach room temperature before you begin mixing. When decorating, using a rotating cake stand and an offset spatula will help you achieve that smooth, professional finish on the buttercream. If you are baking in a particularly humid environment, you can add an extra half-cup of confectioners’ sugar to the frosting to help it maintain its shape.
