Description

This vibrant Jello Cake is a refreshing, no-bake dessert that features beautiful layers of strawberry-infused gelatin and fresh fruit topped with a silky, sweetened condensed milk layer. It is a nostalgic, crowd-pleasing treat that is as visually stunning as it is easy to prepare.


Ingredients

  • 3 packages (3 oz each) Strawberry Jello Mix
  • 5 cups boiling water, divided
  • 3 cups cold water, divided
  • 1.5 cups fresh strawberries, sliced
  • 1 can (14 oz) sweetened condensed milk
  • Fresh mint leaves for garnish


Instructions

  1. Dissolve 2 packages of Strawberry Jello Mix in 4 cups of boiling water, then stir in 2 cups of cold water until fully combined.
  2. Thoroughly grease a 10-inch bundt pan with non-stick cooking spray, ensuring all crevices are covered.
  3. Pour 2 cups of the liquid jello mixture into the prepared pan and refrigerate for 30 minutes until it is partially set and tacky.
  4. Arrange 1/4 cup of sliced strawberries over the tacky layer, pour another 2 cups of jello over them, and return to the fridge for 30 minutes.
  5. Add the remaining strawberries (reserving a few for garnish) and the rest of the first jello batch into the pan, then chill for another 30 minutes.
  6. In a separate heat-proof bowl, dissolve the final package of Jello in 1 cup of boiling water, then stir in 1 cup of cold water and the entire can of sweetened condensed milk.
  7. Allow the creamy mixture to cool at room temperature for 15 minutes before gently pouring it over the firm layers in the bundt pan.
  8. Refrigerate the cake for at least 3 hours, or preferably overnight, to allow the layers to bond completely.
  9. Carefully invert the pan onto a large serving plate to unmold, then decorate with reserved strawberries and mint leaves.

Notes

To ensure clean, distinct layers, make sure the gelatin is only slightly tacky before adding the next portion; if it sets too hard, the layers may slide apart. Using a warm, wet knife when slicing will help you achieve smooth edges that showcase the fruit suspended inside.
