Ingredients
- 4 large eggs, room temperature
- 1 cup caster sugar
- 1 cup all-purpose flour (Maida)
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 tsp vanilla or chocolate essence
- 2 cups heavy whipping cream
- A few drops orange food color
- 1/2 cup milk (for soaking)
- 1/2 cup chocolate chips
- Ready-made fondant (for decoration)
Instructions
- Beat room temperature eggs and caster sugar on high speed for 5 to 7 minutes until pale and fluffy.
- Sift together the all-purpose flour, cocoa powder, and baking powder into a separate bowl to remove lumps.
- Gently fold the sifted dry ingredients and essence into the egg mixture using a spatula, being careful not to deflate the air.
- Pour batter into a greased and lined round cake mold and bake at 350°F (180°C) for 15 to 20 minutes until a toothpick comes out clean.
- Whip the heavy cream with orange food color in a chilled bowl until it forms stiff, spreadable peaks.
- Once the cake is fully cooled, slice horizontally into two layers and soak the bottom layer generously with milk.
- Spread a thick layer of orange cream and sprinkle chocolate chips on the bottom layer, then place the second layer on top.
- Soak the top layer with milk, frost the entire cake with the remaining orange cream, and decorate with fondant jungle shapes.

To ensure the best results, chill your mixing bowl and whisk attachment before whipping the cream to help it stabilize faster. If you are making the cake a day in advance, wait to add the fondant decorations until shortly before serving to prevent the moisture from the cream from softening the fondant.
