Ingredients

  • 2 tablespoons softened butter (for ramekins)

  • 10 tablespoons salted butter
  • 3 large eggs, room temperature
  • 3 large egg yolks, room temperature
  • 1/2 cup powdered sugar
  • 1 pinch sea salt
  • 1 teaspoon pure vanilla extract
  • 1/4 cup all-purpose flour


Instructions

  1. Preheat your oven to 375 degrees F and generously brush the insides of six 6-ounce ramekins with softened butter before coating them with cocoa powder.
  2. In a medium heat-safe bowl, melt the chopped chocolate and 10 tablespoons of salted butter together using a microwave or double boiler until the mixture is glossy and smooth.
  3. Remove from heat and stir in the pinch of sea salt and vanilla extract, then allow the mixture to cool slightly to room temperature.
  4. In a separate large bowl, use an electric mixer to beat the three whole eggs and three egg yolks for 2 to 3 minutes until they are thick, pale, and nearly doubled in volume.
