Description
This playful sheet cake uses the clever addition of orange soda to create a light, citrusy crumb that stays moist for days. Shaped into colorful building blocks and topped with candy studs, it is a simple yet impressive treat that brings a sense of childhood joy to any celebration.
Ingredients
- 4 eggs
- 1 cup white sugar
- 1 packet vanilla sugar
- 1 cup sunflower oil
- 1 cup orange soda
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 2 cups confectioners’ sugar
- 2-3 tablespoons lemon juice
- Food coloring (various colors)
- Candy-coated chocolates (sorted by color)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, beat the eggs, white sugar, and vanilla sugar with an electric mixer until the mixture is thick, pale, and foamy.
- Gently pour in the sunflower oil and the orange-flavored soda, stirring lightly to combine while keeping the aeration.
- Sift the all-purpose flour and baking powder together, then gradually fold them into the wet batter until no lumps remain.
- Pour the batter onto the prepared baking sheet and bake for approximately 30 minutes until golden brown and a toothpick comes out clean.
- Remove the cake from the oven and let it cool completely in the pan for at least one hour to ensure clean slicing.
- Using a sharp serrated knife, cut the cooled cake into rectangles measuring roughly 1.5 by 3 inches.
- Whisk the confectioners’ sugar with lemon juice until a thick icing forms, divide into small bowls, and stir in your desired food colors.
- Brush the colored icing onto the cake rectangles and press eight matching candy-coated chocolates onto each to create the brick studs.
Notes
For the smoothest finish on your bricks, use gel food coloring to achieve vibrant hues without thinning out the icing consistency. If you want perfectly sharp edges, try placing the cake in the freezer for about 15 minutes before cutting to firm up the crumb.
