Ingredients
- 15.25-ounce box lemon cake mix
- 1 package instant lemon pudding mix
- 4 large eggs
- 1 cup water
- 1/2 cup canola oil
- Zest of 2 fresh lemons, divided
- 2 cups confectioner’s sugar
- 1/3 cup fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a 13×9-inch baking pan with parchment paper, using a light spray of oil to keep the paper in place.
- In a large mixing bowl, combine the lemon cake mix, instant lemon pudding mix, four eggs, water, and canola oil along with half of the lemon zest; stir until smooth.
- Pour the batter into the prepared pan and bake for approximately 30 minutes, or until the top is golden and the center is springy to the touch.
- While the cake is baking, whisk together the confectioner’s sugar, 1/3 cup lemon juice, and the remaining lemon zest in a medium bowl until a smooth glaze forms.
- Remove the cake from the oven and let rest for 3 to 5 minutes before poking holes across the surface with a wooden spoon handle; pour the glaze over the top and let cool completely.
Notes
To ensure a perfectly even soak, try to space your holes about an inch apart across the entire surface of the cake. If you find the glaze is too thick to pour into the holes, simply add an extra teaspoon of lemon juice to reach the desired consistency.
