Instructions
- Preheat your oven to 350°F (175°C) and thoroughly grease and flour a fluted tube pan.
- In a medium bowl, sift together the all-purpose flour, salt, and baking soda.
- In a separate large bowl, use an electric mixer to beat the softened butter and white sugar for exactly 10 minutes until the mixture is pale and fluffy.
- Add the eggs one at a time to the butter mixture, beating well after each addition.
- Alternate adding the flour mixture and the buttermilk into the batter, beginning and ending with the flour; mix just until combined.
- Stir in the lemon extract, then pour the batter into the prepared pan.
- Place the pan in the oven and immediately reduce the temperature to 325°F (165°C).
- Bake for 60 to 75 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Whisk together the confectioners’ sugar, lemon juice, softened butter, and lemon zest, then pour half over the warm cake and the remaining half after 20 minutes.
