Description

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups granulated sugar
  • 1 cup unsalted butter, room temperature
  • 1/4 cup vegetable oil
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Gel food coloring (red, orange, yellow, green, blue, purple)
  • 2 cups confectioners’ sugar
  • 1 tablespoon lemon zest
  • 3 tablespoons fresh lemon juice


Instructions

  1. Preheat your oven to 350℉ and grease a 12-cup Bundt pan with non-stick baking spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Using a stand mixer, cream the sugar, butter, and oil on medium speed for 4 minutes until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract, and mix for one additional minute.
  5. With the mixer on low, add the flour mixture in three parts, alternating with the buttermilk in two parts, starting and ending with the flour.
  6. Divide the batter equally into 6 small bowls (about 1 1/3 cups each) and tint each with a different gel food color.
  7. Layer the colored batters into the pan in order: red, orange, yellow, green, blue, and purple, spreading each layer evenly without swirling.
  8. Bake for 50-65 minutes until a tester comes out clean, then cool in the pan for 10 minutes before inverting onto a wire rack.
  9. Whisk together the confectioners’ sugar, lemon zest, and lemon juice to create a thick glaze and drizzle over the completely cooled cake.

Notes

For the most vivid colors, avoid over-mixing once the gel coloring is added to keep the batter airy. If you do not have buttermilk on hand, you can make a quick substitute by adding a tablespoon of lemon juice to a cup of regular milk and letting it sit for five minutes before using.
