- Baking powder
- Salt
- Unsalted butter
- Granulated sugar
- Large eggs
- Vanilla extract
- Buttermilk or whole milk
- Sugar icing (powdered sugar)
Instructions
- Preheat oven to 350°F (175°C) and grease and flour two 8-inch cake rounds lined with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream softened butter and granulated sugar together for about 3 minutes until pale and fluffy.
- Add eggs one at a time, mixing thoroughly, then stir in the vanilla extract.
- Alternate adding the flour mixture and milk to the creamed butter, mixing until just combined.
- Divide batter into pans and bake for 30-35 minutes until a toothpick comes out clean.
- Cool cakes completely before frosting with a whipped mixture of softened butter, icing sugar, vanilla, and milk.
Notes
For a lighter cake, avoid overmixing the batter once the flour is added. If you do not have buttermilk, you can make a quick substitute by adding a tablespoon of lemon juice or vinegar to a cup of whole milk and letting it sit for five minutes.
