Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Unsalted butter
  • Granulated sugar
  • Large eggs
  • Vanilla extract
  • Buttermilk or whole milk
  • Sugar icing (powdered sugar)


Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour two 8-inch cake rounds lined with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream softened butter and granulated sugar together for about 3 minutes until pale and fluffy.
  4. Add eggs one at a time, mixing thoroughly, then stir in the vanilla extract.
  5. Alternate adding the flour mixture and milk to the creamed butter, mixing until just combined.
  6. Divide batter into pans and bake for 30-35 minutes until a toothpick comes out clean.
  7. Cool cakes completely before frosting with a whipped mixture of softened butter, icing sugar, vanilla, and milk.

Notes

For a lighter cake, avoid overmixing the batter once the flour is added. If you do not have buttermilk, you can make a quick substitute by adding a tablespoon of lemon juice or vinegar to a cup of whole milk and letting it sit for five minutes.
