Description
This stunning Marvel Cake features elegant swirls of rich chocolate batter running through a moist vanilla crumb. Made with olive oil instead of butter, it stays incredibly tender for days and offers a sophisticated, bakery-style look with very little effort.
Ingredients
- 1/2 cup cocoa powder
- 2 1/2 cups granulated sugar, divided
- 1/2 cup hot water
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon vanilla powder or extract
- 1/2 teaspoon salt
- 5 large eggs
- 1 cup olive oil
- 1 cup milk
- Icing sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C) and thoroughly grease a bundt pan.
- In a medium bowl, whisk together the cocoa powder, 1/2 cup of sugar, and hot water until smooth; set aside to cool.
- In a separate bowl, whisk together the flour, baking powder, vanilla powder, and salt.
- Using a stand mixer, beat the remaining 2 cups of sugar and 5 eggs until pale and combined, then slowly stream in the olive oil.
- On low speed, add the flour mixture and milk in alternating batches, beginning and ending with the flour.
- Combine 3 cups of the vanilla batter with the chocolate slurry and whisk until uniform.
- Pour a layer of vanilla batter into the pan, drop spoonfuls of chocolate batter on top, add remaining vanilla, and finish with the rest of the chocolate.
- Gently swirl the layers with a knife, then bake for 50 to 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely, then dust with icing sugar.
Notes
To achieve the most striking visual contrast, use a high-quality Dutch-processed cocoa powder for the dark swirls. If you find the batter too thick while mixing, add an extra splash of milk to ensure the texture remains light and airy.
