Description

This stunning Marvel Cake features elegant swirls of rich chocolate batter running through a moist vanilla crumb. Made with olive oil instead of butter, it stays incredibly tender for days and offers a sophisticated, bakery-style look with very little effort.

Ingredients

  • 1/2 cup cocoa powder
  • 2 1/2 cups granulated sugar, divided
  • 1/2 cup hot water
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla powder or extract
  • 1/2 teaspoon salt
  • 5 large eggs
  • 1 cup olive oil
  • 1 cup milk
  • Icing sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and thoroughly grease a bundt pan.
  2. In a medium bowl, whisk together the cocoa powder, 1/2 cup of sugar, and hot water until smooth; set aside to cool.
  3. In a separate bowl, whisk together the flour, baking powder, vanilla powder, and salt.
  4. Using a stand mixer, beat the remaining 2 cups of sugar and 5 eggs until pale and combined, then slowly stream in the olive oil.
  5. On low speed, add the flour mixture and milk in alternating batches, beginning and ending with the flour.
  6. Combine 3 cups of the vanilla batter with the chocolate slurry and whisk until uniform.
  7. Pour a layer of vanilla batter into the pan, drop spoonfuls of chocolate batter on top, add remaining vanilla, and finish with the rest of the chocolate.
  8. Gently swirl the layers with a knife, then bake for 50 to 60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely, then dust with icing sugar.

Notes

To achieve the most striking visual contrast, use a high-quality Dutch-processed cocoa powder for the dark swirls. If you find the batter too thick while mixing, add an extra splash of milk to ensure the texture remains light and airy.
