Description

Ingredients

  • 225g unsalted butter, room temperature (for cake)
  • 200g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 fresh lemons
  • 1 cup full-fat Greek yogurt
  • 250g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 480g unsalted butter, room temperature (for frosting)
  • 1 can (14 oz) sweetened condensed milk
  • Assorted food coloring


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans thoroughly to ensure easy release.
  2. In a large mixing bowl, cream the room-temperature butter and sugar together for 3 to 5 minutes until the mixture is light, fluffy, and pale.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract, lemon zest, and Greek yogurt.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and fold gently until no streaks of flour remain.
  6. Divide the batter evenly between pans and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. To make the frosting, beat the 480g of butter until it is extremely pale and creamy, then slowly pour in the sweetened condensed milk while beating on high speed.
