Ingredients
- 500g Unsalted butter, softened
- 500g Caster sugar
- 8 Large eggs, room temperature
- 2 tsp Vanilla extract
- 500g Self-raising flour
- 2 tbsp Milk
- 1kg Icing sugar
- 500g Unsalted butter, softened (for frosting)
- Purple or lilac gel food coloring
- Optional: Spotify topper and ribbon bows
Instructions
- Preheat your oven to 180°C (350°F) and lightly grease four 6-inch cake tins.
- In a large mixing bowl, beat softened butter and caster sugar together until pale and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Gently fold in the self-raising flour until no white streaks remain, adding milk if the batter is too stiff.
- Divide the batter evenly between the four tins and bake for 25 to 30 minutes until a skewer comes out clean.
- While cakes cool on a wire rack, whip frosting butter until smooth, then gradually add icing sugar and milk until light and airy.
- Mix in a small drop of purple gel coloring until the desired lilac shade is achieved.
- Stack cooled cakes with buttercream layers, apply a thin crumb coat, and pipe vintage-style ruffles using a petal tip before adding final decorations.
Notes
For the most stable cake, ensure your sponges are completely cold before you begin stacking and frosting. If you find the buttercream is getting too warm while you pipe the delicate ruffles, simply pop your piping bag in the fridge for a few minutes to firm up the consistency.
