Description

Create a whimsical and delicious Shrek Cake featuring a moist, gluten-free almond and dark chocolate base. This charming treat is decorated with homemade marzipan, making it a perfect project for birthdays or family baking sessions.


Ingredients

  • 110g butter
  • 110g sugar
  • 200g almond flour
  • 4 eggs
  • 100g dark chocolate
  • 1 egg white
  • 160g almond flour
  • 160g powdered sugar
  • Bitter almond essence
  • Yellow and blue food coloring
  • Cocoa powder
  • Linseeds


Instructions

  1. Gently melt the dark chocolate using a microwave or bain-marie and set aside to cool slightly.
  2. Cream the softened butter and granulated sugar together in a large bowl until the mixture is light and fluffy.
  3. Stir the almond flour, melted chocolate, and four egg yolks into the butter mixture until a smooth batter forms.
  4. In a separate clean bowl, whip the four egg whites until they form firm peaks, then gently fold them into the chocolate batter using a spatula.
  5. Pour the batter into a greased cake tin and bake at 180°C (350°F) for approximately 25 minutes.
  6. Allow the cake to cool completely before trimming it into an oval head shape, keeping the scraps for the ears and eyebrows.
  7. Mix the extra egg white, 160g of almond flour, powdered sugar, and almond essence until a smooth marzipan dough forms.
  8. Set aside a small portion of white marzipan for the eyes and tint the remaining dough green with food coloring.
  9. Roll out the green marzipan, drape it over the cake, and use the reserved cake scraps and extra dough to model the ears and nose.
  10. Complete the face by adding the white marzipan eyes with cocoa powder irises and using linseeds for the eyelashes.

Notes

For the best results, ensure your eggs are at room temperature before whipping the whites to achieve maximum volume. If the marzipan feels too sticky while modeling, lightly dust your hands with a bit of powdered sugar to make it easier to handle.
