Ingredients
- 1 cup oat flour (ground whole oats)
- 1 teaspoon baking powder
- 1 ripe banana, mashed
- 1 carrot, finely grated
- 1/4 cup natural peanut butter (no xylitol)
- 1 large egg
- 1/2 cup plain Greek yogurt
- 1 tablespoon natural peanut butter (for frosting)
- 1 teaspoon cornstarch
Instructions
- Preheat your oven to 350°F (180°C) and line two 4-inch cake tins with baking paper.
- In a large bowl, whisk together the oat flour and baking powder to remove any lumps.
- Add the mashed banana, grated carrot, peanut butter, and egg to the bowl, stirring until the mixture is just combined.
- Divide the batter evenly between the two prepared tins and bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cakes from the oven and allow them to cool completely on a wire rack before frosting.
- Whisk together the Greek yogurt, extra peanut butter, and cornstarch until smooth, then spread the frosting between the cake layers and over the top.
Notes
Always double-check that your peanut butter does not contain xylitol, as it is highly toxic to dogs. If you want a stiffer frosting that holds its shape better for decorating, you can strain the Greek yogurt through a paper towel or cheesecloth for 30 minutes to remove excess liquid before mixing.
