Ingredients
- 2 large eggs, room temperature
- 120g softened butter
- 170g Chelsea White Sugar
- 240g all-purpose flour
- 2 teaspoons baking powder
- 3/4 cup milk
Instructions
- Preheat oven to 180°C (350°F) and grease a standard cake tin.
- In a large bowl, beat softened butter and Chelsea White Sugar together until the mixture is pale and fluffy.
- Add eggs one at a time, beating well after each addition to maintain a smooth structure.
- Sift the flour and baking powder together.
- Alternately add the dry ingredients and the milk to the butter mixture, starting and ending with the flour, mixing until just combined and glossy.
- Pour the batter into the prepared tin and smooth the top with a spatula.
- Bake for 30 to 35 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.
- Let the cake cool in the pan for a few minutes before transferring to a wire rack to cool completely.
