Description

This reliable and light simple cake is a pantry-staple classic that comes together with just six basic ingredients. It offers a tender crumb and a perfectly balanced sweetness, making it the ideal treat for afternoon tea or an effortless everyday dessert.


Ingredients

  • 2 large eggs, room temperature
  • 120g softened butter
  • 170g Chelsea White Sugar
  • 240g all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup milk


Instructions

  1. Preheat oven to 180°C (350°F) and grease a standard cake tin.
  2. In a large bowl, beat softened butter and Chelsea White Sugar together until the mixture is pale and fluffy.
  3. Add eggs one at a time, beating well after each addition to maintain a smooth structure.
  4. Sift the flour and baking powder together.
  5. Alternately add the dry ingredients and the milk to the butter mixture, starting and ending with the flour, mixing until just combined and glossy.
  6. Pour the batter into the prepared tin and smooth the top with a spatula.
  7. Bake for 30 to 35 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

To achieve the best crumb, ensure your butter and eggs are truly at room temperature before starting. If you are in a rush, you can grate cold butter to help it soften quickly, which allows for better aeration during the creaming process.
