Description

Celebrate a first birthday with this perfectly sized vanilla smash cake, featuring an ultra-soft crumb and a charming tiered design. It is specifically crafted to be light enough for little hands to smash while tasting delicious enough for everyone to enjoy.


Ingredients

  • 1 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk
  • Vanilla frosting
  • Multicolored sprinkles


Instructions

  1. Preheat oven to 350 degrees F (175 degrees C) and grease one 6 1/2-inch and one 4 1/2-inch cake pan.
  2. In a medium bowl, whisk together cake flour, baking powder, and salt until evenly combined.
  3. In a large bowl, use an electric mixer to cream together the softened butter and sugar until pale and fluffy, then beat in the eggs one at a time and stir in the vanilla extract.
  4. Alternately add the flour mixture and milk to the butter mixture, mixing gently until just combined to ensure a tender texture.
  5. Divide the batter between the two prepared pans and bake; the smaller cake for 20 to 25 minutes and the larger cake for 35 to 40 minutes, or until a toothpick comes out clean.
  6. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely for at least one hour before decorating.
  7. Frost the sides of the cakes and roll them in sprinkles to coat, then stack the smaller cake on the larger one and finish frosting the top.

Notes

To ensure the tiers stay stable during the celebration, place a small dollop of frosting on the center of the larger cake before stacking the smaller one on top. If you are baking in a warm kitchen, chilling the cake layers for 20 minutes before frosting can prevent the tiers from sliding during assembly.
