Description

Enjoy a tender, moist chocolate treat with this easy-to-make 9×9 square cake. Infused with a hint of espresso and tangy buttermilk, it offers a deep cocoa flavor that is perfect for any casual gathering or afternoon snack.

Ingredients

  • Granulated sugar
  • Brown sugar
  • Vegetable oil
  • Eggs
  • Vanilla extract
  • Buttermilk
  • Warm water
  • Espresso powder (optional)
  • All-purpose flour
  • Baking soda
  • Baking powder
  • Coarse kosher sea salt
  • Quality cocoa powder
  • Unsalted butter
  • Powdered sugar
  • Milk
  • Chocolate curls or pearls for garnish

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch square pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, beat the granulated sugar, brown sugar, and vegetable oil for about 30 seconds until well combined.
  3. Add the eggs and vanilla extract one at a time, mixing well after each addition until the batter is smooth.
  4. Pour in the buttermilk and warm water (with espresso powder mixed in if using) and mix quickly.
  5. Add the flour, baking soda, baking powder, and sea salt, then sift the cocoa powder over the top.
  6. Whisk everything together for about 30 seconds until just combined, taking care not to over-mix.
  7. Pour the batter into the prepared pan and bake for 30-35 minutes until the top springs back or a tester comes out clean.
  8. Allow the cake to cool completely in the pan before frosting.
  9. Prepare the frosting by beating the butter until creamy, then gradually adding powdered sugar, cocoa, milk, and a pinch of salt.
  10. Spread the frosting thickly over the cooled cake and decorate with chocolate curls or pearls before slicing.

Notes

To achieve the lightest texture, ensure your eggs and buttermilk are at room temperature before mixing. Sifting the cocoa powder is a crucial step to avoid bitter lumps in your finished cake. For the cleanest slices, use a sharp knife and wipe it clean between each cut to keep the frosting looking perfect.
