Description

Ingredients
- 1 box white cake mix (plus ingredients required by package directions)
- 2 boxes (3 oz each) strawberry gelatin powder
- 1 cup boiling water
- 1/2 cup cold water
- 8 oz cream cheese, softened
- 2 cups heavy whipping cream
- 1 cup confectioners’ sugar
- 1 tsp vanilla extract
- 1 package (14.3 oz) Golden Oreos, crushed
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350 degrees F and grease a 9×13 inch rectangular baking pan.
- Prepare the white cake mix according to the package directions, pour into the pan, and bake for 22-25 minutes until a toothpick comes out clean.
- Once the cake is completely cooled, use a fork to poke holes across the entire top of the cake.
- Whisk one box of strawberry gelatin with 1 cup boiling water until dissolved, then stir in 1/2 cup cold water and pour the mixture over the cake.
- Cover and refrigerate the cake for at least 4 hours to allow the gelatin to set.
- Beat the softened cream cheese in a stand mixer until light and fluffy.
- In a separate bowl, whisk heavy cream, confectioners’ sugar, and vanilla until stiff peaks form, then gently fold in the cream cheese.
- Spread the frosting evenly over the chilled cake.
- Combine the crushed Golden Oreos, melted butter, and the second box of dry strawberry gelatin in a bowl.
- Sprinkle the pink crumble over the frosting, pressing down gently, and store in the refrigerator until ready to serve.
Notes
To ensure your frosting is perfectly smooth, make sure the cream cheese is at true room temperature before mixing. For the best texture, crush the Golden Oreos into a variety of sizes so you get both fine crumbs and crunchy chunks. Serve the cake directly from the refrigerator to keep the cream cheese frosting stable and the strawberry flavor refreshing.
