She taught me that even a modern dish can feel like home if you treat the basic ingredients with respect. Description

This elegant yet approachable sushi cake layers seasoned rice, fresh salmon, and creamy avocado into a beautiful centerpiece. It is a crowd-pleasing alternative to traditional rolls that captures all the classic flavors without the need for complex rolling techniques.

Ingredients

  • 360g Sushi Rice
  • 50cl Water
  • 12cl Rice Vinegar
  • 95g Sugar
  • 3 tsp Salt
  • 400g Fresh Salmon
  • 2 Ripe Avocados
  • 300g Cream Cheese
  • 2 tbsp Olive Oil
  • Fresh Chives
  • Black Sesame Seeds
  • Nori Sheet

Instructions

  1. Rinse sushi rice under cold water until clear, soak for 15 minutes, then drain.
  2. Boil rice in 50cl water, simmer on low for 12 minutes, then let steam covered for 10 minutes.
  3. Dissolve sugar and salt in warm rice vinegar and gently fold into the warm rice; let cool to room temperature.
  4. Dice chilled salmon and toss with olive oil; slice avocados and soften the cream cheese.
  5. Layer half the rice, cream cheese, avocado, and salmon into a cake ring, then repeat the layers.
  6. Press firmly, garnish with chives and sesame seeds, then carefully remove the ring to serve.

Notes

To ensure the best texture, always use short-grain sushi rice and avoid refrigerating it while cooling, as cold temperatures can make the grains hard. For the cleanest presentation, use a springform pan and lightly grease the sides with a drop of oil before assembly.

Simple Pantry Ingredients

To make this sushi cake, you will need a few basic items that come together to create a wonderful balance of sweet, salty, and fresh. The soul of this dish is the rice, which we prepare with a traditional touch to keep it tender and seasoned just right.

For the Sushi Rice:

  • 360g Sushi Rice: This short-grain rice is essential for the right texture and stickiness.
  • 50cl Water: Used for soaking and simmering the rice to perfection.
  • 12cl Rice Vinegar: This provides the classic tang that cuts through the richness of the fish.
  • 95g Sugar: A bit of sweetness to balance the acidity of the vinegar.
  • 3 tsp Salt: Just enough to bring out the natural flavors of the grain.

For the Filling:

  • 400g Fresh Salmon: Use high-quality, raw salmon for a buttery, tender bite.
  • 2 Ripe Avocados: These add a creamy texture that pairs perfectly with the rice.
  • 300g Cream Cheese: A simple spread that holds the layers together and adds a comforting richness.
  • 2 tbsp Olive Oil: A little touch to keep the salmon glistening and moist.
  • Fresh Chives: For a bright, mild onion flavor that finishes the dish.
  • Black Sesame Seeds: A classic garnish for a little crunch and visual contrast.
  • Nori Sheet: An optional base that adds a hint of the sea to every bite.

The Simple Way

Step 1: Prep the Sushi Rice

Start by rinsing your rice in a fine-mesh strainer under cold running water. Keep rinsing until the water runs clear; this removes excess starch and keeps the rice from becoming a gummy mess. Let it soak in fresh cold water for 15 minutes, then drain. Place the rice in a pot with 50cl of water and bring it to a boil. Once it boils, turn the heat to medium for 2 minutes, then cover and simmer on low for 12 minutes. Give it one gentle stir halfway through to make sure nothing sticks to the bottom. Turn off the heat and let it sit, covered, for another 10 minutes to finish steaming.

Step 2: Season and Cool the Rice

While the rice is resting, warm the rice vinegar in the microwave for a few seconds. Stir in the sugar and salt until they are completely dissolved. Move your warm rice into a large bowl and gently fold in the vinegar mixture with a wooden spoon. Be careful not to mash the grains. Let the rice cool down to room temperature right on your counter. Never put it in the fridge to cool, as that can ruin the texture of the grain.

Step 3: Prepare the Fillings

If you put your salmon in the freezer for about 20 minutes before this step, it will be much easier to dice into clean cubes. Once chilled, cut the salmon into small pieces and toss them in a bowl with the olive oil. Slice your avocados into thin, even strips. In a separate small bowl, mash the cream cheese with a fork or spoon until it is soft and easy to spread.

Step 4: Assemble the Layers

Place a cake ring or springform pan on your serving plate. If you are using nori, cut a circle to fit the bottom and place it inside. Dip your hands in a bowl of cold water to keep the rice from sticking to you. Press half of the rice into the bottom of the ring in an even layer. Spread half of the cream cheese over the rice, followed by half of the avocado slices and half of the salmon. Press down gently with the back of a spoon to pack it tight. Sprinkle on some chopped chives.

Step 5: Finish and Chill

Repeat the layering process with the remaining rice, cream cheese, avocado, and salmon. Press everything down firmly one last time to ensure the cake holds its shape when you remove the ring. Garnish the top with the rest of the chives and a generous sprinkle of black sesame seeds. If you have salmon roe or sprouts, you can add those to the center for a little extra color. Carefully slide the ring off and serve the cake fresh.

One of the best comfort secrets I can share is to always use a very sharp knife when slicing your sushi cake. To get a clean cut every time, dip the knife in warm water and wipe it clean between every single slice. This prevents the rice and cream cheese from sticking to the blade and keeps your layers looking pristine.

If you are looking for a more understated look for your table, you might enjoy our minimal-cake approach which focuses on clean lines and simple presentation. Also, keep in mind that the rice is the foundation; don’t skip the soaking step as it makes the grains much more tender. Easy Changes

You can easily adapt this recipe to fit what you have in your pantry. If you aren’t a fan of raw salmon, try using cooked shrimp or even canned tuna mixed with a little bit of mayo. For a vegetarian version, extra cucumber and marinated tofu work wonders.

If you want to add a bit of color to your spread, our green-cake ideas can show you how to use fresh herbs and vegetables to make any dish pop. You can also swap the cream cheese for Greek yogurt if you want a lighter tang, though the cream cheese provides that classic comfort flavor we love.

Comfort Time

When it comes time to enjoy this meal, I like to serve it right in the center of the table so everyone can help themselves. It pairs wonderfully with a simple side of miso soup or a light cucumber salad. For a whimsical touch at your next gathering, you might even consider serving a comic-cake-2d-cake for dessert to keep the fun theme going.

Make sure to have plenty of soy sauce and extra ginger on hand. This is the kind of meal that encourages slow eating and good conversation. It is simple, honest food that brings people together without any of the pretension of a formal dinner party.

Simple Truth

Baking and making food for the ones you love should always be about comfort and reliability. This sushi cake proves that you don’t need a professional kitchen to make something that tastes like a luxury. It is a humble, honest dish that I hope becomes a regular in your home.
