Description

Experience a wonderful blend of textures with this Ugly Cake, featuring a fluffy yellow base and rich vanilla custard swirls. While its cratered surface gives it its name, the flavor is purely elegant and incredibly easy to achieve with simple pantry staples.

Ingredients

  • 1 (15-ounce) box yellow cake mix
  • 4 large eggs, divided
  • 2 cups whole milk, divided
  • 1/2 cup salted butter, melted
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 (3.4-ounce) package instant vanilla pudding mix
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the yellow cake mix, 3 eggs, 1 cup of whole milk, melted butter, and vanilla extract until smooth. Pour into the prepared dish.
  3. In a separate medium bowl, whisk the softened cream cheese, the remaining 1 cup of milk, the instant vanilla pudding mix, and the remaining 1 egg until creamy.
  4. Pour the custard mixture over the cake batter and use a knife to gently swirl the layers together.
  5. Bake for 40 to 45 minutes until the edges are golden brown.
  6. Let the cake cool for at least 30 minutes to allow the custard to set, then dust with powdered sugar before serving.

Notes

For the smoothest custard consistency, ensure your cream cheese is very soft before mixing. If you prefer a more structured cake, chilling it in the refrigerator after the initial cooling period makes slicing much easier. This dessert travels well, making it a perfect choice for potlucks and family gatherings.
