Description

This incredibly moist Lemon Poke Cake turns a simple boxed mix into a zesty masterpiece using a vibrant gelatin soak and a fresh citrus glaze. It is an effortless yet impressive dessert that is perfect for busy weeknights or summer potlucks.

Ingredients

  • 1 (15.25 oz) box yellow cake mix
  • 1 (3 oz) box lemon gelatin
  • 1 cup boiling water
  • 3/4 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 4 large eggs
  • 2 cups powdered sugar
  • 1/3 cup fresh lemon juice

Instructions

  1. Dissolve the lemon gelatin in 1 cup of boiling water and allow it to cool to room temperature.
  2. In a medium mixing bowl, beat together the canola oil, unsweetened applesauce, and eggs until well combined.
  3. Stir the cooled gelatin mixture into the wet ingredients until smooth.
  4. Slowly add the yellow cake mix on low speed, mixing only until the dry ingredients are just incorporated.
  5. Pour the batter into a greased 9×13-inch baking pan and bake at 375°F for 25 to 30 minutes.
  6. Whisk the powdered sugar and lemon juice together to create a glaze.
  7. While the cake is still warm, poke holes all over the top with a fork and pour the glaze evenly over the surface.

Notes

For the best results, ensure your boiling water is fully incorporated with the gelatin before cooling to prevent any grainy texture in the cake. If you prefer a more intense lemon flavor, you can add the zest of one lemon directly into the cake batter before baking.

The Pantry Basics

Ingredients for lemon poke cake including yellow box mix, fresh lemons, and gelatin
Lemon Poke Cake 16

You probably already have most of these simple ingredients in your kitchen! I love recipes that don’t send me running to a specialty store.

  • Yellow Cake Mix: Grab your favorite standard box (Grandma always swore by Duncan Hines, and I agree).
  • Lemon Gelatin: A standard 3-ounce box adds a brilliant pop of color and flavor.
  • Unsweetened Applesauce & Canola Oil: This duo keeps the cake incredibly moist without being heavy.
  • Eggs: Four large eggs to give our cake structure and a rich, tender crumb.
  • Fresh Lemons & Powdered Sugar: For that beautifully sweet and tart glaze that sinks right into the warm cake.

The Simple Process

Step 1: Prep the Gelatin

Start by dissolving the lemon gelatin in boiling water. I usually just measure the water in a heat-safe glass measuring cup and stir the gelatin right in. Set it aside to cool to room temperature.

Step 2: Mix the Wet Ingredients

In a medium mixing bowl, beat the canola oil, applesauce, and eggs until they are nicely combined. Next, mix in your cooled gelatin mixture until smooth.

Step 3: Add the Cake Mix

Turn your mixer to low speed and slowly add the yellow cake mix. Stop mixing as soon as the dry ingredients disappear—overmixing can make the cake tough!

Step 4: Bake to Perfection

Pour the batter into a greased 9×13-inch pan and bake at 375°F for 25 to 30 minutes. You will know it is done when the top springs back lightly and a toothpick comes out mostly clean.

Step 5: Glaze and Cool

While the cake bakes, whisk the powdered sugar and fresh lemon juice together. Once the cake comes out of the oven, use a fork to poke holes all over the warm top. Pour your lemon glaze evenly over the cake, letting it soak into all those little holes. Let it cool to room temperature before diving in.

When poking the holes, don’t be shy! You want those channels deep enough for the glaze to really sink in and work its magic. I like to use a standard dinner fork, but the handle of a wooden spoon works wonderfully too. I also highly recommend wiping down the edges of your pan before baking to keep cleanup a breeze.

Simple Swaps

This recipe is wonderfully flexible and forgiving. If you want a different fruit profile, swap the lemon gelatin and juice for strawberry to make something similar to this easy strawberry poke cake. You can also fold a handful of white chocolate chips into the batter before baking for a sweet little surprise, or add a splash of vanilla extract to the glaze for a warmer flavor.

Everyday Enjoyment
