Description

This moist, bakery-style apple cider bundt cake features a concentrated orchard syrup and a warming spice blend for the perfect autumnal treat. Finished with a sparkling cinnamon-sugar crust, it delivers a dense, donut-like texture that pairs beautifully with a hot mug of coffee or cider.

Ingredients

  • 10-cup bundt pan (prepared with butter and sugar)
  • All-purpose flour
  • Baking powder
  • Baking soda
  • Fine sea salt
  • Ground cinnamon
  • Ground allspice
  • Nutmeg
  • Ginger
  • Softened butter
  • Dark brown sugar
  • Granulated sugar
  • Eggs
  • Pure vanilla extract
  • Apple cider concentrate
  • Neutral oil
  • Unsweetened applesauce
  • Greek yogurt

Instructions

  1. Prepare the pan. Preheat your oven to 350 degrees F (180 degrees C) and grease a 10-cup bundt pan with butter and a dusting of granulated sugar.
  2. Combine dry ingredients. Whisk together the flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and ginger in a medium bowl.
  3. Cream butter and sugars. Using a stand mixer, beat the butter, brown sugar, and granulated sugar on medium-high speed for three minutes until pale and fluffy.
  4. Mix eggs and vanilla. Add the eggs one at a time, followed by the vanilla extract, beating until the batter is smooth and cohesive.
  5. Incorporate wet and dry ingredients. Alternately add the dry flour mixture, apple cider concentrate, oil, applesauce, and yogurt on low speed, mixing just until combined.
  6. Bake the cake. Pour the batter into the prepared pan and bake for 35 to 42 minutes, or until a wooden toothpick inserted into the center comes out clean.
  7. Cool and invert. Let the cake rest in the pan for 10 minutes, then loosen the edges with a knife and invert onto a wire cooling rack.
  8. Apply the sugar coating. Brush the warm cake with a mixture of melted butter and cider, then dust generously with a blend of cinnamon and granulated sugar.

Notes

  • Ensure all dairy and egg ingredients are at room temperature to prevent the batter from curdling during the mixing process.
  • Do not skip the cider reduction step as it is essential for achieving the intense fruit flavor and correct moisture content.
  • Using a digital kitchen scale for measuring flour is highly recommended to avoid a heavy or dry cake texture.
  • Brush the cake with the butter-cider mixture while it is still warm to ensure the cinnamon-sugar coating adheres perfectly.
