Ingredients

  • 2 cups shredded baking apples
  • 2 cups all-purpose flour

Instructions

  1. Prepare oven and pans. Set your oven to 180°C (350°F) and grease two eight-inch cake tins thoroughly or line with parchment paper.
  2. Whisk dry ingredients. Sift flour, cornstarch, baking powder, baking soda, salt, and all spices into a bowl and whisk until uniform.
  3. Grate fresh apples. Process two medium apples using a hand grater until you have two cups of fine, moist shreds.
  4. Mix wet ingredients. Combine brown sugar, eggs, oil, milk, vanilla, and shredded apples in a large bowl, whisking until well emulsified.
  5. Fold in dry mix. Add the dry spice mixture to the wet ingredients, folding gently with a spatula until just combined.
  6. Bake cake layers. Divide batter into tins and bake for thirty to thirty-three minutes until a toothpick inserted in the center comes out clean.
  7. Cool the layers. Let cakes rest in tins for twenty minutes before inverting them onto a wire rack to cool completely.
