Description

Create a beautiful and refreshing smash cake for your baby’s milestone using a carved watermelon base and a creamy yogurt frosting. This simple, no-bake fruit tower is naturally sweet, light, and perfect for stress-free celebrations.


Ingredients

  • 1 large seedless watermelon
  • 8 ounces Cool Whip
  • 1 cup plain or vanilla Greek yogurt
  • 2 tablespoons instant white chocolate or vanilla pudding mix
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, halved
  • 2 kiwis, thinly sliced


Instructions

  1. Trim the watermelon base. Slice a small, flat portion off the bottom of the melon to stabilize it, then use a knife to remove all green rind and white pith to reveal the red flesh.
  2. Slice the tiers. Cut the peeled melon horizontally into three thick, even discs, each measuring roughly two inches in height.
  3. Guide the rounds. Use three different sized circular guides, such as 9-inch, 6-inch, and 4-inch plates, to trace and cut each melon slice into uniform, nested circles.
  4. Dry the melon tiers. Place the rounds on layers of paper towels on a baking sheet and refrigerate for at least two hours to draw out excess moisture so the frosting will stick.
  5. Prepare the frosting. Whisk together the Cool Whip, Greek yogurt, and two tablespoons of pudding mix in a bowl until the mixture is thick and spreadable.
  6. Assemble the cake. Secure the largest melon round onto a platter with a dollop of frosting, then stack and layer the remaining rounds with a thin spread of frosting between each tier.
  7. Frost and decorate. Pipe or spread the remaining frosting over the tiers and press the sliced kiwis, strawberries, and blueberries into the surface to create a decorative finish.
