Ingredients

  • Eggs

  • White chocolate
  • Icing sugar

Instructions

  1. Prepare the tins. Preheat oven to 170°C and line two 9×13 inch rectangular tins with greaseproof paper.
  2. Cream butter and sugar. Beat the room temperature butter and sugar for five minutes until the mixture is pale, fluffy, and voluminous.
  3. Add wet ingredients. Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.
  4. Combine the batter. Fold in the self-raising flour and milk, divide evenly into the prepared tins, and bake for 30 to 35 minutes until golden.
  5. Infuse the syrup. Simmer water, sugar, elderflower cordial, and fresh mint in a saucepan, then brush the mixture over the warm sponges.
  6. Create the ganache. Boil strawberry puree and glucose syrup, pour over white chocolate and butter, and stir until smooth and thickened.
  7. Whip the buttercream. Beat soft butter with sifted icing sugar and elderflower cordial until light, airy, and fluffy.
  8. Assemble the cake. Layer one sponge with buttercream and fresh strawberries, top with the second sponge, and cover with the strawberry ganache.
