Description
This simple quick bread uses a boxed yellow cake mix as a shortcut to achieve a tender, moist, and flavorful banana loaf. It is a stress-free baking method that delivers bakery-quality results in less than an hour.
Ingredients
- 1 box (15.25 oz) yellow cake mix
- 4-5 medium ripe bananas, heavily speckled
- 2 large eggs, room temperature
- 1/4 cup unsalted butter, melted and slightly cooled
- 1 teaspoon ground cinnamon
Instructions
- Prep the oven. Preheat the oven to 350°F and grease a 9×5-inch loaf pan with butter or non-stick spray.
- Mash the bananas. Peel the ripe bananas and crush them in a bowl using a fork or potato masher until a smooth paste forms.
- Combine wet ingredients. Whisk the melted butter and eggs into the mashed bananas until the mixture is fully incorporated and creamy.
- Mix the batter. Add the yellow cake mix and ground cinnamon to the wet ingredients, stirring gently until just combined.
- Transfer to pan. Pour the batter into the prepared loaf pan, tap on the counter to release air bubbles, and smooth the top with a spatula.
- Bake the bread. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool before serving. Rest the loaf in the pan for 10 minutes, then invert onto a wire rack to cool completely before slicing.
Notes
- Use bananas with dark brown spots for the best natural sweetness and moisture content.
- Avoid overmixing the batter once the cake mix is added to ensure a soft and tender crumb.
- Cooling the melted butter slightly before adding eggs prevents accidental scrambling of the eggs.
- Test the center of the loaf with a toothpick to ensure it is fully baked, as banana moisture can vary by fruit size.
