Instructions
- Start by preheating your oven to 425°F (220°C). Line a 12-cup muffin pan with paper liners.
- In a small bowl, stir together the flour and sugar for the topping. Work in the cold butter until the mixture looks like coarse crumbs, then chill in the fridge.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In a large bowl, beat the room temperature butter and granulated sugar together for about two minutes until the mixture looks light and fluffy.
- Scrape down the sides of the bowl. Add the eggs and vanilla, mixing on low until combined, then increase speed for one minute until smooth.
- Turn the mixer to low and alternate adding the flour mixture and the milk, starting and ending with the flour. Mix just until no dry streaks remain. Gently fold in one heaping cup of your diced peaches using a spatula.
- Divide the batter among the muffin cups, filling them almost to the top. Press the remaining peach pieces onto the surface of each muffin, then generously sprinkle that chilled streusel over the top, pressing the crumbs down lightly so they stick.
- Bake at 425°F for 5 minutes, then immediately turn the oven down to 350°F (177°C) for the remaining 15-18 minutes. They are done when a toothpick comes out clean. Let them cool in the pan for five minutes before moving to a wire rack.

To achieve the best texture, ensure all cold ingredients (butter for the streusel) are kept very cold, and all wet ingredients for the batter (butter, eggs, milk) are at room temperature. This temperature contrast helps create a tender crumb and a crisp topping. If you do not have canned peaches, frozen diced peaches can be substituted; just be sure to thaw and drain them extremely well before folding them into the batter.
