Description

These spiced carrot cake muffins feature a tender, moist crumb infused with fresh orange zest and topped with a crunchy, buttery pecan streusel. Perfect for weekend brunch, they combine classic bakery flavors with a clever, citrusy twist for an elevated morning treat.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1 egg yolk
  • 3/4 cup light brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated fresh carrots
  • 1/2 cup chopped pecans (for topping)
  • 1/4 cup brown sugar (for topping)
  • 2 tablespoons cold butter (for topping)

Instructions

  1. Combine dry ingredients. Sift flour, baking powder, and cinnamon into a bowl and whisk until uniform.
  2. Beat eggs and sugar. In a separate bowl, whisk the egg, egg yolk, and brown sugar until smooth and pale.
  3. Emulsify wet ingredients. Slowly drizzle the oil and vanilla into the egg mixture while whisking until glossy.
  4. Fold in carrots. Gently stir in the grated carrots and allow the mixture to rest on the counter for 10 to 15 minutes.
  5. Incorporate flour mixture. Add the dry ingredients to the carrot base, folding just until no white streaks remain.
  6. Chill the batter. Cover and refrigerate for one to two hours to allow for better rise and structure.
  7. Bake the muffins. Preheat oven to 350°F, fill liners, top with streusel, and bake for 20-24 minutes until a toothpick comes out clean.
  8. Cool before serving. Let the muffins set in the pan for five minutes before transferring to a wire rack to cool completely.

Notes

  • Always hand-grate your carrots to ensure maximum moisture and better texture in the final muffin.
  • Chill the batter thoroughly before baking to achieve those signature high, bakery-style domed tops.
  • Use room temperature eggs to ensure a smooth, stable emulsion with the vegetable oil.
  • Toast your pecans briefly in a dry pan to unlock their natural oils and deepen the flavor of the streusel.
