Instructions

  1. Prep and preheat. Preheat your oven to 350F (175C) and grease two 9-inch round cake pans while lining the bottoms with parchment paper.
  2. Mix dry ingredients. Sift together the cake flour and baking powder in a large bowl, then whisk in a pinch of salt.
  3. Cream butter and sugar. Beat the softened butter until creamy, add the sugar, and continue beating for about four minutes until light and fluffy.
  4. Add wet base. Mix in the eggs one at a time, followed by the vanilla extract, ensuring the bowl is scraped down thoroughly.
  5. Finish the batter. Gradually incorporate the flour mixture, oil, and milk, mixing only until just combined to maintain a tender crumb.
  6. Bake and cool. Divide the batter between pans and bake for 40 to 45 minutes, then cool in pans briefly before transferring to a wire rack.
  7. Prepare fillings. Toss fresh berries with lemon juice and zest, and whip the mascarpone, cream cheese, and powdered sugar with heavy cream until fluffy.
  8. Assemble the layers. Slice cooled cakes horizontally, then stack layers with a spread of jam, cream filling, and berries before frosting the exterior.
