Ingredients
- 3 cups Swan cake flour (plus 2 tablespoons for tossing)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, room temperature
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon almond extract
- 1/4 cup Amaretto liqueur (or milk)
- 2 cups fresh cherries, pitted and halved
- 1 cup powdered sugar
- 1/2 teaspoon almond extract (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350 degrees Fahrenheit and generously grease a bundt pan with baking spray.
- Sift together the cake flour, baking powder, and salt in a medium bowl to remove lumps.
- In an electric mixer, cream the room temperature butter and granulated sugar for 3 to 5 minutes until pale and fluffy.
- Add the eggs one at a time to the butter mixture, followed by the almond extract, mixing well after each addition.
- Slowly alternate adding the sifted flour mixture and the amaretto into the butter mixture, starting and ending with the flour.
- In a small bowl, toss the halved cherries with 2 tablespoons of flour to coat them evenly.
- Gently fold the floured cherries into the cake batter using a spatula, being careful not to overmix.
- Pour the batter into the prepared bundt pan and bake for 50 to 55 minutes, or until a cake tester comes out clean.
- Allow the cake to cool in the pan for 15 to 20 minutes before inverting it onto a serving plate.
- Once the cake is completely cool, whisk together the powdered sugar, almond extract, and milk to create a glaze and drizzle it over the top.

To ensure a perfect release from the pan, try using a baking spray that contains flour and let the cake rest for the full 20 minutes before inverting. If you want to enhance the almond profile, you can substitute the milk in the glaze with a splash of amaretto liqueur for a more spirited finish.
