Ingredients
- All-purpose flour
- Unsweetened cocoa powder
- Baking soda
- Salt
- Granulated sugar
- Eggs
- Vegetable oil
- Buttermilk
- Vanilla extract
- Hot coffee
- Semisweet chocolate
- Heavy cream
- Gelatin powder
- Almond extract
Instructions
- Prepare baking pans. Preheat your oven to 350F and grease two nine-inch round cake pans with butter and a light dusting of flour.
- Whisk dry ingredients. In a large bowl, sift together the flour, cocoa powder, baking soda, and salt until uniform.
- Mix wet base. In a separate bowl, whisk together the sugar, eggs, vegetable oil, buttermilk, and vanilla extract until smooth.
- Incorporate and bloom. Gradually stir the dry ingredients into the wet mixture, then slowly pour in the hot coffee while stirring to bloom the cocoa.
- Bake the layers. Divide the batter between pans and bake for 30 to 35 minutes until a toothpick inserted into the center comes out clean.
- Cool the cakes. Let the pans sit for 15 minutes before inverting the layers onto a wire rack to cool completely.
- Prepare mousse frosting. Melt the chocolate with cream, stir in dissolved gelatin, and let the mixture cool until thickened but pourable.
- Assemble the cake. Fold the chocolate mixture into whipped cream, spread between the cooled cake layers, and apply a thin crumb coat.
- Pipe the rosettes. Fill a piping bag with a large star tip and pipe neat circles over the cake to create the rose design.
Notes
- Use high-quality Dutch-processed cocoa powder for a deeper, more intense chocolate color and flavor.
- Ensure all cake layers are completely room temperature before frosting to prevent the mousse from melting.
- Practice your piping technique on a piece of parchment paper to find the right rhythm before decorating the actual cake.
- For the best structure, chill the assembled cake for at least 30 minutes before serving to ensure the mousse is firm.
