Description

Instructions

  1. Prepare baking pans. Preheat your oven to 350F and grease two nine-inch round cake pans with butter and a light dusting of flour.
  2. Whisk dry ingredients. In a large bowl, sift together the flour, cocoa powder, baking soda, and salt until uniform.
  3. Mix wet base. In a separate bowl, whisk together the sugar, eggs, vegetable oil, buttermilk, and vanilla extract until smooth.
  4. Incorporate and bloom. Gradually stir the dry ingredients into the wet mixture, then slowly pour in the hot coffee while stirring to bloom the cocoa.

  7. Prepare mousse frosting. Melt the chocolate with cream, stir in dissolved gelatin, and let the mixture cool until thickened but pourable.
  8. Assemble the cake. Fold the chocolate mixture into whipped cream, spread between the cooled cake layers, and apply a thin crumb coat.
  9. Pipe the rosettes. Fill a piping bag with a large star tip and pipe neat circles over the cake to create the rose design.
