Ingredients

  • All-purpose flour
  • Unsweetened cocoa powder

  • Fresh zucchini, grated

  • Salt
  • Baking soda
  • Honey


Instructions

  1. Prepare the oven. Preheat the oven to 350 degrees F and thoroughly grease and flour a 9-inch-square cake pan.
  2. Coat the chocolate. Toss half a cup of chocolate chips with one tablespoon of flour in a small bowl to prevent sinking.
  3. Whisk dry ingredients. Combine the remaining flour, cocoa powder, salt, baking soda, and spices in a medium bowl until uniform.
  4. Cream wet ingredients. Beat the sugar, olive oil, eggs, and vanilla in a large bowl for three minutes until smooth and pale.
  5. Combine the batter. Gradually add the flour mixture to the wet ingredients and beat on low speed for two minutes until just combined.
  6. Fold in zucchini. Mix the grated, squeezed zucchini into the batter, then gently fold in the flour-coated chocolate chips by hand.
  7. Bake the cake. Spread the batter into the pan and bake for 30 to 35 minutes until a skewer inserted in the center comes out clean.
  8. Glaze and serve. Melt the remaining chocolate chips with oil and honey, then spread over the cooled cake before serving.
