Description
This moist and decadent chocolate zucchini cake blends the hidden goodness of fresh garden vegetables with rich chocolate chips. It is a reliable, comforting dessert that stays fresh for days, making it the perfect treat to share with friends and family.
Ingredients
- All-purpose flour
- Unsweetened cocoa powder
- Extra-virgin olive oil
- Fresh zucchini, grated
- Nutmeg or allspice
- Semisweet chocolate chips
- Sugar
- Eggs
- Vanilla extract
- Salt
- Baking soda
- Honey
Instructions
- Prepare the oven. Preheat the oven to 350 degrees F and thoroughly grease and flour a 9-inch-square cake pan.
- Coat the chocolate. Toss half a cup of chocolate chips with one tablespoon of flour in a small bowl to prevent sinking.
- Whisk dry ingredients. Combine the remaining flour, cocoa powder, salt, baking soda, and spices in a medium bowl until uniform.
- Cream wet ingredients. Beat the sugar, olive oil, eggs, and vanilla in a large bowl for three minutes until smooth and pale.
- Combine the batter. Gradually add the flour mixture to the wet ingredients and beat on low speed for two minutes until just combined.
- Fold in zucchini. Mix the grated, squeezed zucchini into the batter, then gently fold in the flour-coated chocolate chips by hand.
- Bake the cake. Spread the batter into the pan and bake for 30 to 35 minutes until a skewer inserted in the center comes out clean.
- Glaze and serve. Melt the remaining chocolate chips with oil and honey, then spread over the cooled cake before serving.
Notes
- Always squeeze as much moisture as possible from the grated zucchini to ensure a perfect crumb.
- Use room temperature eggs to help the fat and sugar emulsify properly during the mixing process.
- Measure flour by spooning it into the measuring cup rather than scooping directly from the bag to avoid a dense cake.
- Allow the cake to sit for several hours before slicing to let the moisture and chocolate flavors fully develop.
