Description

This delightful double-layer cake features a tender, citrus-infused crumb packed with juicy fresh blueberries. Finished with a rich, velvety cream cheese frosting, it is the perfect homemade treat for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup sour cream
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups fresh blueberries
  • 1 tablespoon flour (for tossing berries)
  • 8 ounces cream cheese, softened
  • 3 cups powdered sugar

Instructions

  1. Prep the oven. Preheat to 350 degrees Fahrenheit and grease two nine-inch cake pans with parchment paper liners.
  2. Cream the butter. Beat softened butter, granulated sugar, and brown sugar together for five minutes until light and fluffy.
  3. Add wet ingredients. Mix in eggs one at a time, followed by vanilla extract and sour cream until the batter is uniform.
  4. Combine dry ingredients. Add flour, baking powder, and salt, mixing on low until just incorporated to avoid overmixing.
  5. Incorporate fruit. Gently fold in lemon juice, zest, and blueberries that have been tossed in a tablespoon of flour.
  6. Bake the layers. Divide batter into pans and bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  7. Whisk the frosting. Beat cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and zest until fluffy.
  8. Assemble the cake. Spread frosting between the cooled layers and cover the top and sides of the cake before serving.

Notes

  • Ensure all dairy and fat ingredients are at room temperature to achieve a smooth, lump-free batter and frosting.
  • Avoid overmixing the batter once the flour is added to ensure a light and tender cake texture.
  • Coating fresh berries in a light dusting of flour prevents them from sinking to the bottom of the pan during the bake.
  • Use block-style cream cheese rather than tub-style to ensure the frosting remains stable and spreadable.
  • Allow the cake layers to cool completely in their pans before attempting to frost them to prevent the icing from melting.
