Description

These Classic Coffee Cake Muffins feature a tender, spiced cinnamon base topped with a buttery, crunchy brown sugar streusel. Finished with a delicate vanilla glaze, they offer the perfect bakery-style treat to brighten any morning.

Ingredients

  • All-purpose flour
  • Light brown sugar
  • Granulated sugar
  • Ground cinnamon
  • Unsalted butter, melted and cooled
  • Baking powder
  • Baking soda
  • Salt
  • Milk, room temperature
  • Eggs, room temperature
  • Pure vanilla extract
  • Confectioners’ sugar

Instructions

  1. Prepare the oven. Set your oven to 375 degrees Fahrenheit and line a twelve-cup muffin tin with paper liners.
  2. Assemble the streusel. Mix flour, light brown sugar, granulated sugar, and cinnamon, then drizzle with melted butter and toss until clumpy before chilling in the refrigerator.
  3. Combine dry ingredients. Whisk together the flour, light brown sugar, baking powder, baking soda, ground cinnamon, and salt in a large bowl.
  4. Whisk wet ingredients. In a separate bowl, blend the milk, eggs, melted butter, and vanilla extract until smooth.
  5. Blend the batter. Pour the wet ingredients into the dry and stir gently with a spatula just until the flour disappears, ensuring you do not overmix.
  6. Fill and top. Distribute the batter into the prepared muffin liners, top each with a generous amount of chilled streusel, and press the crumbs gently to adhere.
  7. Bake the muffins. Place on the center rack and bake for eighteen minutes or until a toothpick inserted into the center comes out clean.
  8. Glaze and serve. Whisk confectioners’ sugar with a little milk to create a glaze, then drizzle over the cooled muffins before serving.

Notes

  • Bring your milk and eggs to room temperature to ensure the batter emulsifies properly for a tender crumb.
  • Always use a kitchen scale to measure flour to prevent packing and ensure the muffins remain light and fluffy.
  • Keep your streusel topping chilled in the refrigerator until the very last second to ensure it stays crunchy rather than melting.
  • Use a light hand when mixing the batter to avoid developing too much gluten, which can cause the muffins to become dense.
  • Rotate your muffin pan halfway through the bake if your oven has uneven hot spots to guarantee perfect golden tops.
