Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

  • 2 large eggs
  • 1/2 cup heavy whipping cream
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted salted butter
  • 2 tablespoons vegetable oil (plus more for frying)
  • Powdered sugar for dusting


Instructions

  1. Heat the oil. Pour vegetable oil into a deep pot to a depth of three inches and heat to exactly 375°F using a reliable thermometer.
  2. Combine dry ingredients. Whisk together the flour, baking powder, sugar, salt, and ground nutmeg in a large bowl until evenly distributed.
  3. Whisk wet ingredients. Beat the eggs in a separate bowl until foamy, then stir in the heavy cream, milk, vanilla, melted butter, and two tablespoons of oil.
  4. Mix the batter. Combine the wet and dry ingredients using a spatula until just incorporated, being careful not to overmix the batter.
  5. Test the oil. Confirm the oil is at 375°F, then drop a small amount of batter in to ensure it sizzles and floats within three seconds.
  6. Fry the bites. Scoop tablespoon-sized portions of batter into the oil, frying in small batches of five or six until they puff up.
  7. Flip and brown. Cook for about one minute total, turning the bites halfway through until both sides reach a deep golden brown.
  8. Drain and dust. Remove the bites with a slotted spoon, drain on paper towels, and generously dust with powdered sugar while still warm.
