Description

These golden, crispy funnel cake fries bring the nostalgic taste of the carnival to your kitchen in minutes. Made with a simple, airy batter, they are the perfect sweet treat for quick snacking or casual dessert gatherings.

Ingredients

  • Vegetable oil for frying
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • Powdered sugar for dusting

Instructions

  1. Heat the oil. Fill a heavy-bottomed pot with two inches of oil and heat to 375 degrees using a candy thermometer.
  2. Whisk the eggs. Combine eggs and granulated sugar in a large bowl, whisking until the mixture is pale, foamy, and thickened.
  3. Add wet ingredients. Pour in the whole milk and vanilla extract, whisking gently until the mixture is completely uniform.
  4. Combine dry goods. Sift the flour, baking powder, and salt into the wet mixture, stirring just until the dry pockets disappear.
  5. Prepare the dispenser. Transfer the batter into a piping bag or a sturdy freezer bag with a corner trimmed for dispensing.
  6. Fry the strips. Pipe four-inch strips into the hot oil, frying five or six at a time for about one minute until golden.
  7. Flip and drain. Flip the strips using tongs or a slotted spoon and cook for another minute before draining on a wire rack.
  8. Dust and serve. Generously coat the warm fries with powdered sugar and serve immediately for the best texture.

Notes

  • Ensure the oil returns to 375 degrees between each batch to prevent greasy or undercooked results.
  • Measure flour using a kitchen scale to avoid packing, which ensures the batter stays light and airy.
  • Use a high smoke point neutral oil like canola or vegetable oil for a clean, professional flavor profile.
  • Pipe the strips directly into the oil for uniform shapes and consistent cooking times across every batch.
