Ingredients

  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 1 1/2 cups light brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tbsp cornstarch
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 1 tbsp ground cinnamon
  • 1/2 cup melted butter (for topping)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)


Instructions

  1. Prep the oven. Preheat your oven to 350°F and grease a 13×9 inch baking pan with butter and a dusting of flour.
  2. Cream butter and cheese. Beat the softened butter and cream cheese together in a large bowl until smooth and fluffy.
  3. Add sugars and eggs. Mix in the brown sugar and granulated sugar, then add eggs one at a time followed by the vanilla extract.
  4. Whisk dry ingredients. In a separate medium bowl, combine the flour, baking powder, cornstarch, and salt.
  5. Combine the batter. Gradually alternate adding the dry flour mixture and buttermilk to the wet base, mixing until just combined.
  6. Assemble the layers. Spread half the batter in the pan, sprinkle with cinnamon-sugar, then top with remaining batter.
  7. Add streusel topping. Combine flour, sugars, cinnamon, and melted butter to create crumbs; scatter evenly over the cake batter.
  8. Bake the cake. Bake for 40 to 50 minutes until golden and a toothpick inserted into the center comes out clean.
  9. Cool and glaze. Allow the cake to cool on a wire rack before drizzling with a simple glaze of powdered sugar and milk.
