Description
Create a stunning, no-bake summer dessert with this refreshing watermelon layer cake. This vibrant fruit-based centerpiece is easy to assemble and perfect for serving at backyard gatherings without any heavy baking.
Ingredients
- 1 Large watermelon
- 1 Small watermelon
- 4 Large wood skewers
- 20-30 Wood toothpicks
- 1 Cup fresh grapes
- 2 Cups assorted berries (raspberries, blueberries, blackberries)
- 1 Bunch fresh mint leaves
Instructions
- Prep the cylinders. Cut the large and small watermelons into three distinct cylinder shapes, ensuring they have flat tops and bottoms.
- Smooth the edges. Use a sharp knife to remove all green rind and white pith, then gently round the corner edges of each cylinder.
- Stack the layers. Place the largest watermelon cylinder on a flat plate or cake stand, then carefully center the medium and small cylinders on top.
- Secure with skewers. Insert four long wood skewers through the center of the top two tiers, pushing them deep into the base layer for stability.
- Add fruit decorations. Use toothpicks to attach clusters of grapes and assorted berries to the exterior of the watermelon layers to create a cascading effect.
- Garnish with mint. Tuck fresh mint leaves into the crevices between the fruit clusters to add color and a fragrant finish.
Notes
- Pat the exterior of the watermelon dry with paper towels before decorating to ensure the fruit stays securely in place.
- Use a long, sharp serrated bread knife for the cleanest cuts on the watermelon without bruising the flesh.
- Keep the assembled cake chilled in the refrigerator until the last possible minute to prevent the fruit from softening.
- If the cake layers begin to wobble, adjust the wooden skewers closer to the center of the structure for better vertical balance.
